Chewy peanut butter meltaways (gluten free!)


Here's an easy to remember recipe for soft, melt on your tongue cookies. They quench your sweet tooth, have protein to keep you satisfied and have absolutely no flour. For those of you looking for gluten free recipes, give this one a try. 



1 cup peanut butter

1 cup powdered sugar, sifted (and a little extra for coating)

1 teaspoon vanilla extract

1 egg

Preheat oven to 375 degrees. Beat all ingredients in a medium bowl until blended. Drop by the teaspoonful onto a lined baking pan. Smash down with either a fork or glass dipped in the extra sugar to prevent sticking. Bake 7-9 minutes. Cool on rack. 

Makes 16-20 cookies.
