Remembering pizza burgers

Pizza burger day in elementary school was a big deal. Little hamburger buns smooshed down and topped with white cheese, sauce and hamburger, then slid through a toaster oven until lightly browned. They were always washed down with the tiniest carton of milk beside mixed vegetables and pears served in a little accordion-style paper cup. Those were the days.

Did I mention I found the exact same trays we used in school at the Burlington Antique Fair? You know I snatched two up!

Anyway, it has been like a zillion degrees here all week so I was looking for a quick snack that wasn't cold but didn't involve heating up the entire kitchen (i.e. something that would fit in the toaster oven).

And in my head, out of nowhere, popped the memory of pizza burgers! However, the pizza burgers of yesteryear had to go through a little remodel before making their way back onto our plates. I love this version; using the wheat muffins packed with fiber make them very filling.

Pizza Burgers

  • English muffins, I used the Healthy Grains kind from Thomas'

  • Pepperoni, I used turkey (but hamburger, sausage, veggies, whatever you have)

  • Mozzarella cheese

  • Pizza sauce, I actually just used leftover spaghetti sauce with a little sugar tossed in

  • Mrs. Dash or Italian Seasoning

Heat oven to 350 degrees.

Split the muffins and lay them nook and cranny side up on a covered baking sheet. Spoon a tablespoon of sauce on each muffin half. Top with seasoning, pepperoni and cheese.

Bake until the cheese starts to brown, start checking in at 5 minutes. When you pull them out of the oven, cool on a rack or the bottoms will get soggy.
