Simple vegan tomato soup


I must have at least 5 great tomato soup recipes in my rotation. This is my go-to crockpot recipe in the fall (i.e. before the indulgent holidays) because it is super quick and chock full of vegetables plus whole grains. 


1 jar spaghetti sauce

1 small onion, diced

1/2 c diced carrot (if you like soft carrots in your soups, you are going to want to microwave or sauté these a bit before adding to pot)

1/2 c uncooked wheat pasta (white pasta turns too mushy)

I clove of garlic, minced

1 can white beans, drained and rinsed

4 c vegetable stock

1/2 tsp red pepper flakes, if you like spice

2 tsp dried Italian seasoning

Pepper and salt at end to taste (spaghetti sauce has a lot of salt, you may not need to add any).


Throw all ingredients (except salt and pepper) in a crockpot. Set on high for four hours.
